Reuben Pinwheels

Pinwheels are favorite appetizers to  serve as they require only a few ingredients, easy to make and are very tasty – everyone loves them!

Reuben Pinwheels

  • 1 sheet puff pastry, thawed unfolded for 30 minutes
  • Thousand Island dressing or use Dijon mustard
  • 3 oz. gruyere or swiss cheese, thinly sliced
  • 6 oz. of deli corned beef, thinly sliced
  • egg wash (1 egg mixed with 2 tsp. water)

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or foil. Lightly spray with a cooking spray.

Thaw the puff pastry on the counter for 30 minutes – be sure not to unfold it until after 30 minutes to minimize any tears. If there should be any cracks just use a little water on them and smooth them back into the dough.

Unfold and roll out to 10×14-inch rectangle. Spread dressing or mustard over the puff pastry. Then place the cheese and  finally tear the corned beef into pieces and scatter on  top of the cheese.

Cut the rectangle in half and  roll up each half towards the center. Cut into 1/2-inch rolls. I like to cut the palmiers in half and make pinwheels.

Place on a sprayed baking sheet as they do want to stick. Brush with the egg wash to give the tops a nice color. Bake for 10-15 minutes or until they are nicely browned. Serve warm or at room temperature within an hour.

You can also freeze these rolls prior to slicing and baking. When ready to serve; thaw and cut into slices and bake as above.

    • Sure why not… I make a reuben casserole and serve it for breakfast/brunch 🙂

    • That’s great Ralu – you can make these with any meat, cheese, veggies, etc. Sausage is another good version 🙂

  1. You just gave me an idea for what to serve at an upcoming afternoon gathering. I’m going to have a pinwheel buffet and your Reuben Pinwheels will be front and center. We’ll make your Prosciutto, Parmesan and Honey Mustard and maybe cheeseburger pinwheels. Perhaps I’ll make a dessert pinwheel. Thanks for the inspiration, Judi.
