Everyone has their own marinade for steaks and this is the one used in my kitchen, thanks to my husband Gene for coming up with his own special marinade. I am fortunate to have a good meat market in my neck of the woods where I can get excellent filet mignons. They also have a restaurant called Knight’s, which is well known.
Gene's Grilled Steak
- filet mignon (6-8 oz.) each (can also use rib eye, t-bone, NY strip, etc.)
- 1/4 cup olive oil
- 2-3 tbsp. Worcestershire sauce
- 1/8 cup A-1 sauce
- couple dashes of Hickory Smoked Flavor Sauce
- couple dashes of Tabasco
- couple dashes of garlic juice
Combine above ingredients and marinate for a couple of hours prior to cooking. You can broil these in the oven or use your grill.

Garnish your steak with some Cajun onions:
Caramelized Cajun Onions
- 3-4 large onions, sliced
- butter, softened (enough to cook the amount of onions you have)
- 1 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. oregano
- 1/4 tsp. ground black pepper
- 1/4 tsp. nutmeg
- 1/8 tsp. white pepper
- 1/2 tsp. Tabasco
- 1/4 tsp. Worcestershire sauce
Melt the butter in a cast iron skillet. Add the onions and the seasonings and cook for about 30 minutes turning often until nicely caramelized.
