Cheesy Chile Corn Casserole

I love green bean casserole with the fried onions – another side dish I grew up with. Our Thanksgiving table was not complete without this. When I saw the French fried onions in the ingredient list of this recipe I knew I wanted to try it. A different twist on creamed corn or my Jiffy Corn Casserole I posted not too long ago. Not so rich or heavy but with a little kick because of the green chilies and dash of red pepper.

I didn’t make this for Turkey Day but with some ham and roasted mini cabbage steaks…

Just delicious, simple to make, not very rich and can even be made in a slow cooker…

I know there is a lot of processed food in this recipe but if you plan ahead you can freeze fresh corn in season, roast a poblano pepper, make your own cheese sauce and even fried onions. Some times it just makes sense to take the easy route! It didn’t make my holiday table but I made it with ham and roasted cabbage steaks.

Campbell's Cheesy Chile Corn Casserole

  • 1 can (10-3/4 oz.) Campbell’s Condensed Cheddar Cheese Soup (I substituted Nacho Cheese Soup)
  • 1/4 cup milk
  • 1 tbsp. (unsalted) butter, melted
  • dash of ground red pepper (to taste)
  • 1 bag (16 oz.) frozen whole kernel corn, thawed (I used two cans (16 oz. each) of canned corn) 
  • 1 can (4.5 oz.) chopped green chilies
  • 1 can (2.8 oz.) French fried onions (1-1/3 cups)

Heat the oven to 350 degrees. Combine the soup, milk, butter, pepper, corn, chiles and 2/3 cup onions in  1-1/2 quart casserole.

Bake for 25 minutes or until the corn casserole is bubbling. Stir the mixture and sprinkle the remaining onions on top.

Bake for 5 minutes or until the onions are golden brown.

I baked this casserole in the oven but you could also use a slow cooker…

    • Yes, it’s true – many of the soups made by the Campbells Soup Co. (since 1869) are condensed and you add water or milk to the can. Did you know that this company is a major manufacturer in Shepparton? This American company has lots of products besides soups all over the world 🙂
