The changes they have made are not agreeing with me – too complicated or maybe I just don’t have the patience. Anyways, I am still working on this issue – any suggestions for picture editing? I continue to make new recipes and take pictures and hope to be back in business before too long…
I have always enjoyed tacos – the family enjoys them especially the younger crowd. Mexican cuisine and cooking some rather simple recipes are a small part of my blog such as Chicken Chiminchangas, Nachos on the Grill, Potato-Chorizo Sopes, Queso Dips. This taco recipe uses beef and is quite spicy which is what I like.
Tacos are a lot of fun to make and offer a variety of ingredients you probably already have in your pantry or refrigerator.
Quesadillas are also a possibility and can be a delicious appetizer or lunch (maybe dinner too).
This recipe is inspired by the Food Network…
Spicy Beef Tacos
- vegetable oil (just enough to saute the onions – maybe 1 tbsp.)
- 1 large onion, finely chopped
- 1 jalapeno, seeded and ribs removed – finely chopped
- 1 tbsp. tomato paste (comes in a tube or sometimes I have some frozen from a can)
- 2 tsp. Worcestershire sauce
- 2 tbsp. chili powder (any heat level or type of chili)
- 1 tbsp. ground cumin
- 2 tsp. ground coriander
- 1 tsp. paprika
- 1 tsp. dried oregano
- 1/2 tsp. garlic powder
- 1 to 1-1/2 lbs. ground chuck
- kosher salt and pepper to taste
- 1 (15 oz.) can petite diced tomatoes or use a can of tomatoes and chilies and eliminate the fresh jalapeno
- 1 tsp. hot sauce of your choice – I used Slap ya Mama
- taco shells or tortillas
- toppings can include: shredded lettuce, shredded cheddar cheese, fresh or homemade pickled jalapenos, diced fresh tomatoes, salsa, refried beans, sour cream, green onion slices and whatever else you like on your tacos
Heat the vegetable oil in a large skillet. Add the onion and fresh jalapeno (if using) and cook, stirring occasionally for about 5 minutes. Add the tomato paste, Worcestershire sauce, chili powder, cumin, coriander, paprika, oregano and garlic powder. Stir until the onions are coated with this mixture.
Add the beef, salt and pepper to taste. Break up the meat while stirring until it is no longer pink, maybe 5 minutes. Add the tomatoes, hot sauce and 1/4 cup water; bring to a simmer. Reduce the heat, stir occasionally until the liquid is mostly absorbed.
If you’re using tortillas like I did get out your tortilla warmer and heat the tortillas in the microwave for 15 seconds for 2 tortillas. Add more time for more tortillas.

Thanks you! It’s a Southern hot sauce! I have PicMonkey and they totally changed their format – I like simple! I remember WordPress talked about changing to the Block format for good – hope that doesn’t happen 🙂

Have you noticed the ages – all 30-40 group – maybe a little younger or maybe a little older. They don’t consider seniors like me 🙂

I love quesadillas! Once when I catered I did a quesadilla bar, for customized quesadillas. It was hard work but so much fun! I had beef, shrimp, mangoes,you name it. I like your recipe here!!! And I love your pickled jalapenos.
Thanks – I don’t make a lot of Mexican/Tex-Mex food but I do love tacos/quesadillas, oh and loaded nachos! The pickled jalapenos are easy to make and love them in this recipe. A quesadilla bar – what fun. I love to serve that kind of meal where people have a choice. I do it on a small scale but I can’t imagine the work involved catering a party.
Quesadillas are favorites at our house…well maybe almost anything Mexican. I have also made my own pickled jalapenos, they are so much better and healthier than the store bought ones.
I love Mexican – I only make simple recipes like these quesadillas/tacos. Making pickled jalapenos is one of the simplest recipes to make too!
Growing up in Texas, I have a real fondness for Tex-Mex food. Your tacos sound terrific.
Thanks Karen – I’ve been a Northern gal all my life but I still enjoy Tex-Mex food. You’ve been around with Texas, New Hampshire and now Florida. Food is probably somewhat different but the basics are all the same like tacos! When I would have 6 or more kids to feed who were visiting for a week, tacos were always a favorite 🙂
