These tasty pickles were included in a recipe for Koreatown Baby Back Ribs. I love these flavorful pickles so much that I decided to give them a post of their own.

This recipe comes from food and lifestyle writer, cookbook author and private chef Gaby Dalkin who also has a food blog “What’s Gaby Cooking“. I have her cookbook and follow her blog which always has recipes that I enjoy making.
Homemade Spicy Pickles with Jalapenos
- 1 lb. Persian or English cucumbers, sliced 1/2-inch thick
- 1 tbsp. Kosher salt
- 4 garlic cloves, minced
- 1 tbsp. fresh ginger, grated to taste (I prefer about 1/2 tbsp.)
- 6 scallions, white and light green parts, chopped
- 5 tbsp. rice vinegar
- 1 jalapeno, thinly sliced (seeds removed for less heat)
- 1 tbsp. honey
- 1 tsp. low-sodium soy sauce
- 1/2 tsp. toasted sesame oil
Place the cucumbers in a colander set over a bowl; sprinkle with the salt and give them a quick toss. Let sit for 30 minutes. Rinse the cucumbers and pat dry thoroughly; I do this a couple of times to get as much moisture out of the cucumbers as possible.
Toss the cucumbers with the garlic, ginger, scallions, vinegar, chile, honey, soy sauce and sesame oil and stir to coat. Refrigerate overnight…
Be sure to double the recipe as these spicy pickles will be popular. They are crisp and nicely flavored with a little heat.

I can’t believe that I’ve never made my own pickles! I don’t know how your pickling ingredients differ from traditional ones, but I’m so intrigued! Love the ginger and soy sauce!
Thanks – they are very tasty and I love them as a side with sandwiches (instead of chips or something bad for me). I did can my own pickles at one time – different ingredients such as a lot more sugar and vinegar and the quantity. These pickles last a few weeks in the refrigerator.

Gaby’s recipe is full of flavorful ingredients. I like rice vinegar and always jalapenos which are from my container garden.

I love pickles, period! I think I’ve pickled almost everything, but cucumbers are absolutely THE BEST! Green tomatoes are not the best, lol. At least not to me. Your pickles here make my mouth water. I can make a snack out of them! Thanks for cohosting, Judi! What a week, with 92 links!
Thanks Angie – I love pickles too but so many of them are full of salt/sugar. These are some of the best home made pickles I’ve eaten. I’m not a big green tomato fan even though I love them otherwise. 92 is a great week – not too far from 100. If some of the regulars had posted (like I’m seeing this week) we would be over 100 🙂
