Well, I am finally writing down a recipe for grilled bread, just in time for grilling season. This is a favorite way to serve it and everyone loves the “cheesy” flavor with a hint of garlic.
Grilled Garlic and Cheese Bread
- 8 tbsp. of unsalted butter, softened
- parsley, freshly minced
- 2 tbsp. garlic, minced – or to taste – could substitute garlic powder
- 1 tsp. oregano, freshly minced
- 1 baguette, halved – see Overnight Crusty Baguettes for a recipe to make your own bread
- 1/4 cup Parmesan, grated
- 1/2 to 3/4 cup Mozarella, grated
Preheat your grill and brush the the cut sides of the baguette with olive oil. Grill cut side down until nicely toasted. If you want a soft crust just skip this step. Combine the first four ingredients in a small bowl. Spread this mixture over the baguette halves and sprinkle with Parmesan and Mozarella.
Grill the bread, with the lid down, on a piece of foil until the cheese melts, about 10 minutes.

I am the one who grills in my family and it just says summertiime! For a salad I like to grill baby romaine halves – adds some nice texture and flavor!
