Lemon Verbena and Mint Iced Tea

You can make tea using many different kinds or combination of herbs or edible flowers.  You just need to experiment and find the flavors you like best.  Herb teas are decaffeinated and so refreshing;  you control what goes in your tea.  Many recipes call for boiling water and pouring over a certain amount of crushed herbs or flowers.  But if you plan ahead try making refrigerator herb tea.  I have used a combination of lemon verbena and mint as an example.

Other favorite herbs that I grow are Roman Chamomile where I use the flowers to infuse the apple like taste.  Lavender flowers make a very flavorful and aromatic tea.  Use 2 tsp. or so of dried calendula petals and pour a cup of boiling over it.  Steep for 10  minutes or so…  (see my post Edible Flowers).

Lemon Verbena and Mint Iced Tea

  • lemon verbena leaves
  • Kentucky Colonel Spearmint leaves
  • quart canning jars

Bruise the herbs before adding to a quart jar filled with water and refrigerate overnight.
