Apple Pancakes with Cider Syrup

Apple Pancakes with Cider Syrup

  • 1/2 cup flour
  • 1/4 whole wheat flour
  • 2 tsp. sugar
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 2/3 cup apple, peeled and and finely chopped ( or less)
  • 2/3 cup buttermilk (add more if you want a thinner pancake)
  • 1 egg, separated
  • 2 tsp. butter, melted
  • 1/4 tsp. vanilla

Combine the first six ingredients and stir in the apple pieces.  Combine the buttermilk, egg yolk, butter and vanilla; stir into the dry ingredients.  Beat egg white until soft peaks form; fold into batter.

Cook pancakes on both sides until done.  Serve with the cider syrup below or Michigan maple syrup would taste great too!

Apple Cider Syrup:

  • 1/4 cup sugar (I like to cut back on the sugar)
  • 2 tsp. cornstarch
  • 2/3 cup apple cider or apple juice
  • 1 cinnamon stick (2 inches long)
  • dash of ground nutmeg

In a small saucepan, combine the first 3 ingredients; add the cinnamon stick.  Bring to a boil over medium heat and cook for a couple of minutes or until thickened.  Discard cinnamon stick.  Add nutmeg to syrup and serve warm over apple pancakes.
