We like blue cheese – whether you put it in a sauce to go on a burger or steak, using it in a dip for potato chips, vegies or wings or just crumbled up over some fresh lettuce. This is a very good sauce… as long as you use a veryyyyy good blue cheese! I have changed this recipe from Bobby Flay some to fit our tastes. Blue Cheese Sauce
- 2 cups whole milk (2% is fine to use)
- 2 tbsp. unsalted butter
- 1 small sweet onion, finely chopped
- 1/4 tsp. kosher salt
- Pinch or two of cayenne pepper
- 4 oz. blue cheese such as Maytag, crumbled (about 1 cup)
- fresh chives, finely chopped
Heat the milk in a small saucepan over low heat until it simmers.
In another saucepan saute the onion until soft, about 5 minutes. Stir in the flour and cook for another minute. Whisk in the warm milk and stir until the mixture thickens, about 2 minutes. Season with salt and cayenne pepper to taste and continue to cook, whisking occasionally, for 5 minutes.
Remove from the heat and stir in the cheese until it melts, sprinkle with the chopped chives.
