This pasta dish has some really great flavors with an Italian twist. Bacon, cheese and pine nuts made this a favorite side dish of my husband. He especially liked the toasted pine nuts and not so much bacon.
Savory Orzo
- 1-1/2 cups orzo
- 4 slices bacon
- 1 cup green onions, sliced
- 1/2 cup Parmesan cheese, grated and divided
- 1/2 cup toasted pine nuts
- 2 tsp. Italian seasoning
- 3/4 tsp. seasoned salt (I use less)
Cook orzo as directed on the package, usually about 8 to 12 minutes. Drain well and set aside.
Cook bacon in a large skillet until crisp; drain and crumble. Save some of the drippings and saute the green onions for about 2 minutes.
Stir in orzo, bacon, 1/4 cup of the cheese and remaining ingredients. Cook a couple of minutes or until heated through. Sprinkle with remaining 1/4 cup Parmesan.
