This recipe comes from one of my garden cookbooks by Renee Shepherd “More Recipes From A Kitchen Garden” where my husband wrote next to the recipe “make for husband”. Occasionally, he would go through some recipes and choose something he would like me to fix. Favorite ingredients such as maple and orange attracted his attention -very good especially with home grown carrots – so sweet!
Maple and Orange Glazed Carrots
- 1 tbsp. butter
- 2 tsp. fresh ginger, grated
- 1 bunch scallions, chopped (reserve some for garnish)
- 1 lb. carrots, peeled and sliced into 1/4-inch rounds
- 2 tsp. orange zest, grated
- 1 cup orange juice
- 3 tbsp. maple syrup
- 1 tbsp. fresh lemon thyme leaves, chopped
- salt and pepper to taste
Melt butter in a medium saucepan; add ginger and scallions and saute for a couple of minutes. Add carrots, orange zest and juice. Cover pan, bring to a boil, reduce heat and simmer until carrots are tender, about 15 minutes. Add maple syrup and lemon thyme and cook, uncovered, stirring frequently until the liquid becomes syrupy, about 5 minutes. Add salt and pepper to taste and garnish with chopped scallions or you could use chives.
