Party Rye Snacks Six Ways

Using cocktail party rye bread is always a good appetizer to serve family and guests.  The sausage, pizza and onion rye snacks can be made ahead of time and frozen.  The three cheese snacks should be made fresh.  You also can toast the bread first, then put on the toppings.

Sausage Snacks

  • 1 lb. Italian sausage, casings removed (sweet or hot)
  • 1 lb. Bob Evans zesty hot sausage (bulk)
  • lots of onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp. oregano
  • 1 lb. Colby cheese, shredded or cubed
  • 1 lb. Mozarella cheese, shredded or cubed
  • 2 loaves cocktail rye bread

Cook sausage and onions in a very large skillet until the meat is no longer pink; drain and return to the skillet.  Add the garlic and saute a minute, then add all of the cheese and oregano.  Continue stirring until all of the cheese has melted. Allow mixture to cool before spreading a spoonful of it on each party rye bread.  Place slices in a single layer on large baking sheets  and freeze.  When frozen, place in plastic bags and store in freezer until needed. To serve, thaw and place on lightly greased baking sheets.  Bake at 425° F for 8-10 minutes. I have not baked these sausage snacks yet.

Parmesan Snacks

  • 3/4 cup Hellmann’s mayonnaise
  • 3/4 cups Parmesan, grated
  • 1 tbsp. milk
  • 1/3 cup green onions, chopped
  • cocktail rye bread

Combine first 3 ingredients and mix well; stir in green onions.  Spread a layer on each slice of bread and place on a baking sheet.  Broil until lightly toasted.

Cheddar Snacks

  • vidalia onions, thinly sliced or caramelized onions (I prefer to use these)
  • Hellmann’s mayonnaise
  • sharp cheddar, shredded
  • cocktail rye bread

Spread each bread slice with Hellmann’s; add a slice of onion or caramelized onions, and top it off with the cheese.  Broil until lightly browned.

Swiss

  • 1/2 cup Hellmanns mayonnaise
  • 1/4 cup onion, minced
  • 2 tbsp. parsley
  • 1 lb. swiss cheese, grated
  • cocktail rye bread

Combine first 3 ingredients.  Spread mixture on rye bread, then top with swiss cheese.  Broil until lightly browned and the cheese has melted.

Pizza Snacks

  • 1 lb. ground beef
  • 1 lb. Bob Evans zesty hot sausage (or use any Italian cheese)
  • 1 lb. Velveeta, cubed
  • 3 tbsp. Worcestershire sauce
  • 3 tbsp. ketchup
  • 1 tsp. garlic salt
  • 1 tsp. oregano
  • 1-1/2 loaves cocktail party rye bread

Cook beef and sausage until the meat is no longer pink; drain.  Add the rest of the ingredients (except the bread of course) and stir until melted. Place on large baking sheets and bake at 350° F for 10 to 15 minutes or freeze as above with sausage snacks.

Onion Rye Snacks

  • 1 (2.8 oz.) can french-fried onions, crushed
  • 3/4 cup bacon, cooked and crumbled
  • 1/2 cup mayonnaise
  • 3 cups Swiss cheese, shredded
  • 14 oz. pizza sauce
  • 1 loaf cocktail party rye bread

Combine the onions, crumbled bacon, mayonnaise and Swiss cheese.  Spread 1 tsp. pizza sauce on each bread slice.  Top with approximately 1 tbsp. of the cheese mixture. You can freeze these for up to 2 months.  Whether they are frozen or fresh, bake in a preheated 350° F degree oven for about 12-15 minutes or until the cheese melts.
