How do you get your salad dressing to stick to the lettuce and not sink to the bottom?
Rinse your salad greens and dry them in a salad spinner. Place in a bowl and sprinkle with grated Parmesan and toss to coat. Your salad dressing will cling to the cheese and in turn to the lettuce. Just a little bit of Parmesan adds some additional flavor as well to many salad dressings. This cooking tidbit works especially well when you are using vinaigrettes, which are usually on the thin side.
I used a raspberry vinaigrette over romaine and bibb lettuce. Perfect!
