I had a Foley Food Mill for many years and it was one piece, not the three discs you get when you buy the new food mills. I love my All-Clad Food Mill – top of the line and the interchangeable discs are great. There are a number of other food mills that are not so expensive and work just as well – just shop around!
You get a fine one for baby food, fruit sauces and vegetables soups; medium for root vegetables, hummus and tomato sauces; and a coarse one for chunky applesauce or pasta. The disc you use depends on the desired food texture. I make all of these dishes in some form or another and would not do without this kitchen gadget, especially for my tomato sauces.
