Cooking something fun and different was always a “must” when the kids came to visit. Elephant ears or Funnel Cakes are always a big hit at state fairs, church festivals and amusement parks. We made this fried cake at home for Valentine’s Day one year. I know someone was very happy!
Elephant Ears
- 6 cups vegetable oil for frying
- 1-1/2 cups milk
- 2 large eggs
- 2 cups unbleached flour
- 1 tsp. baking powder
- 2 tbsp. sugar
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 cup confectioners’ sugar
Heat the oil to 375°F in a deep fryer with sides at least 3 inches deep.
Beat together the milk and eggs. Whisk the flour, baking powder, sugar, cinnamon and salt. Stir into the egg mixture until smooth.
Pour 1 cup of batter, starting in the center of the hot oil, and in a swirling motion, pour batter in concentric and overlapping circles to make a 6-inch round. If you have a funnel pour the batter through this; that is why they are called funnel cakes. Fry both sides until golden brown. Remove and drain on paper towels and sprinkle with confectioners’ sugar; serve warm.
