Ham and Cheese Sandwiches Two Ways

When I knew I was going to have a crowd for lunch I would make these sandwiches ahead of time and freeze them.  I did have a lot of freezer space where I could do this.  You can also put them in your refrigerator until time to bake them.  A brother-in-law said these were the best ham sandwiches he has ever had!

Ham and Cheese Sandwiches

  • 1/2 cup butter, melted
  • 1/4 cup onions, finely chopped (or you could use dried onions)
  • 1-2 tsp. poppy seeds (I prefer 1 tsp.)
  • 2 tbsp. regular mustard (use horseradish mustard instead for a little extra zip or even honey mustard or 1 tbsp. Dijon would be good)
  • 1 tsp. Worcestershire sauce (add this to taste – you could go up to 1 tbsp.)
  • 12 large croissants cut in half,  hamburger buns or make mini sandwiches with Hawaiian sweet dinner rolls or pretzel rolls
  • 1 lb. ham, shaved
  • 12-24 slices swiss cheese – depends on whether you want one or two slices on each sandwich, thinly sliced (or gruyere)

Blend first five ingredients and allow to cool as it will thicken.  Then spread both insides of the croissants.  Divide evenly the ham and swiss cheese between the croissant halves.  May be wrapped individually in foil and frozen.   I usually wrap them first in saran wrap if I am freezing them, then some foil.  Just be sure to remove the saran wrap before baking.   Thaw and bake in the foil they are wrapped in at 350°F for 20 to 30 minutes.

Comment: Recently I made these and cooked them for only 10 minutes at 350 degrees wrapped in foil. The center was a little cool but the sandwiches were still good. Cook them to your taste… Can also be cooked in the microwave for 30 seconds.

I recently found this recipe which I have adapted to my taste  in one of the Taste Of Home Cookbooks.  Very similar to the one above and a perfect sandwich to make ahead of time.

Ham, Bacon and Cheese Sandwiches

  • 2 tbsp. mayonnaise
  • 2 hamburger buns or large croissants
  • 1/4 cup cheddar cheese, shredded
  • 4 slices bacon, cooked until crisp
  • any thinly sliced ham (4-6 slices)
  • 1/4 cup mozzarella cheese, shredded

Spread mayonnaise over rolls.  Layer roll bottoms with cheddar, bacon, ham and mozarella cheese.  Replace tops and wrap sandwiches in foil.

Bake in a preheated 350°F oven for about 10-20 minutes.
