A very simple dish to serve as a side with Thanksgiving dinner or with a recipe such as Sweet and Sour Meatballs. Mom always fixed these noodles for Thanksgiving – I am not sure when this tradition started or why. This is my own version of these tender noodles great on their own or with another recipe such as Beef Tips.
Egg Noodles
- 8 oz. extra wide egg noodles or dumplings
- 2 quarts low-sodium chicken broth
- 1-1/2 tsp. poultry seasoning (to taste and optional)
- dash of black pepper
Bring the chicken broth, poultry seasoning and pepper to boil. Add noodles and cook for about 20 minutes.
If you plan to serve them as a side dish follow the above directions and make a butter sauce of 1/4 cup chicken broth and 4 tbsp. unsalted butter heated. Add to the noodles before serving…
Comment: Lately I have been using Organic Imagine Free Range Chicken Broth (low fat and low sodium). It is fine to use in stuffing, making broth or even gravy. But not with these egg noodles. It produced a funny texture and a little different taste. For these noodles I recommend using Swanson Chicken Broth (33 % less sodium).
