Perfect sauce for a pork tenderloin, very flavorful with the cider and calvados.
Apple Cider Sauce
- 1-1/2 cups apple cider plus 2 tbsp. (or apple juice if you cannot get good apple cider)
- 1/2 cup brown sugar, packed
- 1/4 cup applejack or calvados (I use calvados)
- 1 tbsp. butter
- 1 tbsp. fresh lemon juice
- 1/4 tsp. ground cardamom or allspice ( cannot belive how expensive ground cardamom is but that is what I use – it does last a long time)
- 1/4 tsp. salt
- pinch of ground black pepper
- 1 tbsp. cornstarch
Combine all ingredients but 2 tbsp. apple cider and cornstarch. Boil over medium heat for 3 minutes. Mix 2 tbsp. apple cider with cornstarch and add to the sauce.
