These are so cute as individual servings and they add a nice touch to a Fall meal. The tiny pumpkins give you just a taste of a wonderful side dish during the cooler months.
Jack Be Little Miniature Pumpkins
- 1 miniature pumpkin (per person)
- butter
- brown sugar
- sprinkle of nutmeg and cinnamon
Preheat the oven to 350°F. Carefully cut off the very top of each pumpkin, about 1/4 of the way down. Scoop out the seeds and strings.
Put a little butter, brown sugar and spices inside each pumpkin; put the top back on. Place them on a cookie sheet and bake for 40-60 minutes depending on the size of the pumpkins. You want them to hold their shape and for the mixture not to leak out.
Comment: Instead of the butter mixture you could add fresh homemade applesauce.
