Weight Watcher’s Caramelized Onion Dip

This is a great substitute for Mrs. Grass Onion Soup Mix combined with sour cream.  A lot less salt and fat!  Weight Watcher’s suggests using it as a dip with vegetables; I would prefer some roasted, sliced red potatoes or some baked potato chips.  As a dip for vegetables this just does not work for me…

Weight Watcher's Caramelized Onion Dip

  • 2 tsp. olive oil
  • 1 very large onion, finely chopped
  • 1/4 cup water
  • 1 beef bouillon cube
  • 1 cup plain low-fat Greek yogurt
  • 1/3 cup low-fat mayonnaise
  • 2 tsp. lemon juice (I only used 1 tsp.)
  • 1/8 tsp. salt

Heat the oil and add the onions; cover and cook for 5 minutes, or until tender.  Reduce heat, uncover and cook 20-25 minutes until nicely browned.  Heat the water and dissolve the bouillon cube. Add to the onions and then allow to cool before adding to the yogurt mixture.

Combine yogurt, mayonnaise, lemon juice and salt and add the onions.  Chill for a couple of hours before serving.  What makes this dip special is the caramelized onions.

1/4  cup dip plus 1/2 cup vegetables is 2 WW points
