Frittata With Leeks, Potatoes and Gruyere Cheese

I love to serve frittatas for breakfast using a special pan (see Kitchen Gadgets – Frittata Pans).  They are very similar to omelettes and this version is very tasty.  You can substitute any Swiss cheese for the Gruyere but it does add a savoriness without overshadowing the other ingredients.

Pizzelles Two Ways

These are delicate, thin and crispy cookies that you bake in a P. Flavored with anise this is a nice Italian cookie.  I have also included a recipe for a chocolate pizzelle with nuts, a little different from the traditional pizzelle.    See Kitchen Gadgets – Pizzelles Irons.    

Peanut Butter Chocolate Chunk Cookies

This is a favorite recipe from the Barefoot Contessa.  I have six of her cookbooks (I think that is all that she has published) and her recipes never disappoint me.  She always bakes with extra large eggs so I always have to make lots of goodies using those larger eggs!
