Black Bean Soup

This is a very flavorful soup that is quick to make with ingredients I usually have on hand. The recipe comes from one of my low-salt cookbooks where I have changed a few things.

Michigan Navy Bean Soup

I like to make this soup soon after I have made a ham dinner on Easter or any other time of the year.   In the past I have used Honey Baked Ham bones, but this time I used a regular ham bone from the market.    It was very salty even though I was careful about adding … Continue reading

Egg Drop Soup Two Ways

This is another recipe from my early Chinese cooking classes.  A perfect light soup to fix before your main entree and was a frequent request by Gene.  I have also included another recipe by Weight Watcher’s where shredded chicken is added.   Hmm… never put chicken in this soup.

Soup Mix

There are 13 different beans and peas that go into this soup mix.  Use whichever ones you like just end up with the same total amount when you are done.  Certainly you could cut the quantities in half if you do not want to make this much. To be honest, I am not a lima … Continue reading

French Market Soup

This was a fun soup to make with all of the different beans and peas (13 different kinds – see Soup Mix)  I made up the soup mix and gave the beans to family and friends with this recipe.  Now you can buy soup mixes already made up but I still like to make up my own.

Leek and Potato Soup

I first made this soup when I grew potatoes and leeks in my garden one year.  Too many Colorado Potato Beetles (I tried not to use sprays and usually hand picked them off or got the eggs before they hatched).  That was the last year I grew potatoes!

Tomato Basil Parmesan Soup

Tomato soup is another ‘comfort food’ for me, good old Campbell’s Tomato Soup,  but when I want it to be really special I will make this.

Weight Watcher’s Vegetable Soup Two Ways

Both of these recipes are very good and even with the new point system in Weight Watcher’s the points value is still 0.   One recipe uses a slow cooker.   So, if I have a Banana Blueberry Muffin for breakfast I might have one of these soups for lunch.  It is all about moderation and balancing the … Continue reading

Tomato Soup Concentrate

I had so many tomato plants when I had my big garden as I was always trying out new varieties in addition to growing my favorites so this was a great way to use up all of those tomatoes.  The smell of the fresh tarragon is wonderful… Beautiful, fresh roma tomatoes! Just starting to cook… … Continue reading

Minestrone Soup With Parmesan Crisps

This vegetable packed soup is full of nutrition and a perfect dish to eat on its own with some crackers for lunch.  Or serve it for dinner with some good bread and a tossed salad.  For a nice touch serve with Parmesan Crisps.  I have included two recipes, one which is all Parmesan cheese and … Continue reading
