Southern-Style Chicken and Dumplings

A comfort classic by Weight Watcher’s from their 50th anniversary cookbook which I made during the cool weather we were having in Michigan a couple weeks ago;  low 70’s for early June…  I do not think I have ever made this, at least I do not have any recipes for it.   Even though it is a … Continue reading

Spicy Chicken or Soy Lettuce Wraps

If you want something simple, but very tasty, for lunch or perhaps dinner give these recipes a try.  The first one is a Weight Watcher’s PointsPlus value of 2 per wrap.  Lettuce wraps have been very popular for some time now,  especially since they are lower in fat.  Big difference between a leaf of lettuce … Continue reading

Lemon Chicken With Broccoli Weight Watcher’s Style

This is a really tasty dish with a lemon flavor that is not overwhelming.  It is a very light and fulfilling entrée to serve over rice or noodles.  Best of all this dinner is only four points per serving (not including rice or noodles) and serves 4.

Ziti With Chicken and Broccoli in a Creamy Sauce

This is an immune-boosting recipe from the dieticians at Mother Earth News which I have changed a little.  I use to get the Herb Companion for a very long time and they have now joined Mother Earth News so I thought I would give this new magazine a try.

Chicken Piccata Two Ways

There are many versions of this recipe and they all have two ingredients in common; lemons and capers.  This dish was especially liked by Gene and me.  I make this different ways (including a Weight Watcher’s recipe – see below) and I always wanted to try the California Pizza Kitchen’s version with a piccata cream sauce that … Continue reading

Weight Watcher’s Meatball Subs

These subs would be great to serve during football season or any time you would like a different kind of sandwich.  I always like to use my own meatball and sauce recipe (see Spaghetti with Meatballs in a Marinara Sauce for my recipes).  You can use your own recipes or follow the recipe below.  The important thing is … Continue reading

Cajun (Dirty) Rice Two Ways

The traditional name for this rice is “dirty rice” or “rice dressing” in certain areas of the South.  Since I do not add the “dirty” part (chicken livers or giblets), I felt “Cajun Rice” was more appropriate.   I do like rice and enjoy cooking it various ways and with different ingredients.  This is a new … Continue reading

Oven Fried Chicken Two Ways

A very good baked fried chicken that is soaked in buttermilk overnight.  I compared the recipes I had and the first one posted below was different because of the mayonnaise.  I have always soaked my chicken, fried or baked, in buttermilk for probably 35 years.   An idea from an old neighbor who made all of the … Continue reading

Caribbean-Style Pork Tenderloin

Many of us here in Michigan in mid-February wish we were visiting one of the Caribbean Islands right now.  This recipe is very tasty even just marinating the pork for 2 hours as well as up to 2 days.  There are 4 points per 3 slices of pork and comes from a new Weight Watcher’s cookbook that has lots of … Continue reading

Weight Watcher’s Black Bean and Rice Enchiladas

I have always enjoyed Mexican food; I just have not made it very often.  Gene liked Chiles Rellenos and that was about it.  This dish is worth about 6 points per tortilla.  If you add some meat you need to add an additional point or two.
