How do you hold pasta while you are making your sauce?
This information on preparing pasta ahead of time came from a chef to the Governor of Ohio. There are occasions when timing is an issue and it is convenient to have this step done ahead of time. This is a good thing!
This procedure works for any type of pasta, but dried pasta seems to hold up better than fresh. Cook the pasta according to package directions, any size or shape until done. Drain, then toss with oil. You want every piece of pasta to be completely coated with oil, but do not overdo it; the pasta will glisten. Season to taste with salt and pepper if desired.
Put the pasta in a large bowl, cover with foil and hold in a 250 degree oven for up to an hour. It should not stick together.
