Sweet Vidalia onions and caramel-like balsamic vinegar combine to make a sweet and complex dish and only worth 1 point per serving.
Weight Watcher's Onions Balsamico
- 2 (8 oz.)Vidalia (or any sweet onion), peeled, trimmed and sliced 1/4-inch thick
- 1/4 cup water
- 2 tsp. olive oil
- 2 tbsp. balsamic vinegar
- 2 tsp. sugar
- 1/2 tbsp. thyme, chopped
- 1/4 tsp. salt
- pepper to taste
Preheat the oven to 425 degrees. Spread the onions evenly in a 9×13-inch baking dish; pour in the water. Drizzle with the olive oil and balsamic vinegar. Add the sugar, thyme, salt and pepper to taste. Cover and bake about 30 minutes.
Uncover and bake until the onions are golden brown and start to caramelize, another 30 minutes. Add a little water if necessary and baste occasionally.
