Maize and Blueberry Bread

If you enjoy blueberries with a hint of orange you will enjoy this pound cake like bread – GO BLUE (University of Michigan Football Team).  An orange and honey glaze adds a nice touch.  Always a favorite when I make this.

The picture below was taken on February 21, 2018. I used a different loaf pan, coated the blueberries in a little flour so they would be distributed throughout the bread better and substituted maple syrup for the honey. Of all things to be out of – I did have hot honey and a salted honey but no plain ole honey. The glaze turned out different as it was not as thick (or sticky) and the bread just soaked it up.

Maize and Blueberry Bread

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tbsp. orange zest, minced
  • 2 tbsp. butter, melted
  • 1/4 cup hot water
  • 1/2 cup orange juice
  • 1 egg, beaten
  • 1 cup blueberries

Preheat your oven to 350°F.  Mix all dry ingredients in a large bowl.  In another bowl mix all of the wet ingredients, except for the blueberries.  Fold dry and wet ingredients together only until just combined.  Fold in blueberries.

Bake in a greased and floured large loaf pan for 60-70 minutes (or 2 smaller pans for 40-45 minutes).  Test with a knife; if it comes out clean it is done.

Orange Glaze:

  • 2 tbsp. orange juice
  • 1 tsp. orange zest, minced
  • 2 tbsp. honey

Boil the glaze ingredients until slightly reduced and thickened.  Immediately remove bread from pan and brush with glaze. Once I used maple syrup and it was not as thick (or sticky) and it penetrated the bread where you could hardly see the glaze.
