Red Rice on the Grill

Rice is a very versatile side dish where there is a big choice in the type of grain, what you add to it and how you cook it.  This is one of the few times I use instant rice but when you are grilling it is a good choice.

Red Rice on the Grill

  • 1-1/3 cups uncooked instant rice
  • 1/4 cup green pepper, chopped
  • 1/4 cup onion, chopped
  • 1/2 cup water
  • 1/2 cup low-sodium chicken broth
  • 1/3 cup ketchup

In a 10-inch square foil, combine all of the ingredients.  Cover with heavy foil and seal tightly.

Grill, covered, over medium heat for 15 minutes or until the liquid is absorbed.  If it is too dry add a little more water or chicken broth.

Here I served it with some leftover meat that I made into a stir-fry.
